Slimming World Curry in a Hurry


Serves: 4
Cooking Time: 40-60mins
Syns Per Serving: Free


Ingredients:

* Frylight
* 4 x Chicken Breasts
* 1 x Onion
* 1 x Clove of Garlic
* 1 Heaped Teaspoon of Ground Ginger
* 2 Heaped Tablespoons of Medium Curry Powder
* 1 Heaped Teaspoon of Turmeric
* 1 x Knorr Chicken Stockpot
* 500mls of Warm Chicken Stock
* Tin of Chopped Tomatoes
( Add speedy veg to your liking! )
I used:
* 1x Courgette
* 1/2 Head of Broccoli
* 1 Packet of Mushrooms






Method:

Grate onion & crush garlic,
Spray your saucepan with Frylight, add your onion & garlic, Cook for a couple of minutes until softened,
Chop chicken breasts, add to pot & cook for approx 10 mins,
Then add your warm chicken stock & stir well!
Now time to add the spices! Stir in the curry powder, turmeric, ginger & knorr stock pot.
Time to add some speedy veg, you can pop what you like but I added broccoli, mushrooms & courgette.
Now add your chopped tomatoes.
Turn down the heat,cover & let simmer for 30mins.





Serve with rice.

This curry is quite hot so if your prefer a milder you could use the mild curry powder or if you are a fan of your curry being hotter add some extra curry powder tasting as you go along!
